Honey Mustard Ribs

1) Cut and separate your ribs, add half of your onion into a bowl together with the ribs season with salt pepper. Place into a hot pot and brown evenly.

Ingredients
  

  • Prime shoulder ribs 1kg
  • 1 red onion, sliced
  • 1.5L water
  • 1 ½ tbsp. tomato paste
  • 1 red chili
  • 2 tbsp. honey
  • 3 ½ tbsp. mustard
  • 2 ½ tbsp. sugar

DIRECTIONS:
  1. Cut and separate your ribs, add half of your onion into a bowl together with the ribs season with salt pepper. Place into a hot pot and brown evenly.
  2. After browning add the tomato paste ensure the ribs are coated well with it and allow to brown a little further.
  3. Add your water and red chilli and bring to the boil until only half the liquid has remained.
  4. Remove the ribs and set aside to cool.
  5. Let the liquid in the pot reduce to about 1 ½ cups. (pork stock)
  6. In a separate pan add 3 tablespoons of oil and add the other half of the sliced onions and allow to brown lightly, add your mustard and sugar, lower the heat and allow to darken in colour, light golden colour.
  7. Take the 1 ½ cups of pork stock and add it into the sauce mix well, add your honey and now allow to reduce on low heat until thick and coats back of a spoon.
  8. Add your cooled ribs and ensure well coated. Bake in an oven at 180 degrees for 35 to 40 minutes until golden and sticky.
  9. Sprinkle over with coriander and serve.
