Ingredients:
1 kg lamb ribs (cut into manageable pieces)
1 tbsp cooking oil
1 large onion, chopped
2 cloves garlic, minced
1 thumb-sized piece of ginger, grated
2 tomatoes, chopped or blended
1 tbsp tomato paste (optional, for richness)
1 tsp paprika
1 tsp cumin or pilau masala
1 beef or mutton stock cube (e.g., Royco or Knorr)
Salt and black pepper to taste
1/2 cup water
Fresh coriander for garnish
Juice of 1/2 lemon (optional for serving)
Instructions:
- Season fillets with salt, pepper, garlic, and lemon juice. Let sit for 10 mins.
- Dust lightly with flour on both sides.
- Heat oil in a pan over medium heat.
- Fry fillets for 3–4 minutes per side until golden brown and cooked through.
- Drain on paper towels and serve hot.
- Serve with ugali, kachumbari, or fries
