Chicken Leg Quarters

Yields: 1 Serving Prep Time: 15 Mins Cook Time: 45 Mins Total Time: 1 Hr

Ingredients:

4 chicken leg quarters (thigh & drumstick attached)
3 tbsp olive oil
2 tbsp soy sauce
1 tbsp Worcestershire sauce
2 tbsp lemon juice
1 tbsp honey (or brown sugar)
4 cloves garlic, minced
1 tsp smoked paprika
1 tsp onion powder
1 tsp dried oregano
1/2 tsp cayenne pepper (optional for spice)
Salt & black pepper to taste

Instructions:

  •  Marinate the Chicken:
    – In a large bowl, mix olive oil, soy sauce, Worcestershire sauce, lemon juice, honey, garlic, and all spices.
    – Coat the chicken legs thoroughly in the marinade. Cover and refrigerate for at least 2 hours (preferably overnight).
  • Preheat & Prepare:
    – Preheat your oven to 400°F (200°C) or fire up a grill to **medium-high heat.
  • Oven Method:
    – Place the chicken on a baking rack over a lined tray.
    – Bake for 40-45 minutes, flipping halfway, until the skin is crispy and the internal temp reaches 175°F (80°C).
    – For extra crispiness, broil for 3-5 minutes at the end.
  • Grill Method:
    – Grill the chicken skin-side down for 5-7 minutes, then flip and cook for another 25-30 minutes, turning occasionally.
  • Rest & Serve:
    – Let the chicken rest for 5 minutes before serving.
    – Serve with roasted potatoes, coleslaw, or rice.
