Ingredients:
500g pork fillet, sliced into thin strips or medallions
2 tbsp vegetable oil
1 large onion, sliced
2 garlic cloves, minced
1 tbsp fresh ginger, grated
2 ripe tomatoes, chopped
1 tbsp fresh coriander/dhania, chopped
Juice of 1/2 lemon (optional)
1 green or red chili (optional), sliced
1/2 tsp turmeric
1 tsp paprika
1 tsp black pepper
1 tsp cumin powder
1 tbsp soy sauce or Worcestershire sauce
Salt to taste
Instructions:
Prepare the pork:
Pat fillet dry. Optionally marinate with lemon juice, garlic, and black pepper for 15 minutes.
Sear the pork:
Heat oil in a pan until hot.
Add pork slices and sear over medium-high heat until browned (about 3–4 minutes per side).
Remove and set aside.
Make the base:
In the same pan, reduce heat.
Add onions and sauté until soft and golden.
Stir in garlic, ginger, turmeric, paprika, cumin, and chili.
Add tomatoes and cook until softened and saucy.
Combine & finish:
Return pork to the pan. Stir in soy sauce.
Cook uncovered for 5–7 minutes until everything is well combined and slightly dry.
Sprinkle fresh coriander and a splash of lemon juice.
