– 1-inch piece of fresh ginger, minced

– 1 teaspoon paprika

– 1/2 teaspoon ground cumin
– 1/2 teaspoon chili flakes or cayenne (adjust to heat preference)
– 1 beef or chicken stock cube (e.g., Royco), crushed
– Salt to taste
– 1 tablespoon honey or brown sugar (optional for caramelization)
– 1 onion, sliced (optional, for serving)
– Fresh coriander (cilantro), chopped for garnish
Marination (At least 1 hour, or overnight for best flavor):
1. In a bowl, mix the oil, lemon juice, tomato paste, garlic, ginger, soy sauce, and all spices.
2. Rub the marinade generously onto the pork steaks.
3. Cover and refrigerate for at least 1 hour (preferably overnight).
Instructions
1. Preheat a charcoal grill or gas grill.
2. Grill pork steaks on medium-high heat for about **6–7 minutes per side**,
or until fully cooked and slightly charred.
3. Baste occasionally with leftover marinade for extra flavor.
4. Serve hot with grilled onions and garnish with coriander.
