Ingredients
  

  • Two Chopped onions
  • Two cloves of garlic crushed and chopped
  • Two hundred gms Chopped celery 
  • Fifty gms Tomato puree
  • Teaspoon of Salt and pepper

Pre-cook your ribs in good seasoned bone stock. If you do not have good stock make up the following for the pre-cooking of the ribs.
Ingredients to cook 5 kilo of ribs.
  1. Two Chopped onions.
  2. Two cloves of garlic crushed and chopped
  3. Two hundred gms Chopped celery 
  4. Fifty gms Tomato puree.
  5. Teaspoon of Salt and pepper.
Fry the onions and garlic in a little oil in a deep cooking pot for just 5 mins, place your racks of ribs in the same pot and just cover with water
Do not drown the ribs, it better to keep topping up the water as they cook. Add all the other ingredients and bring to the boil and then simmer for 40 mins or until the meat starts to pull away from the bone. Remove and keep warm as you make your Glaze.
 
To make up your glaze, strain the ribs boiling stock, bring back to the boil and reduce by 50% then allow to simmer as you make your glaze.
Ingredients for: Glaze. HOLD THE HONEY TILL THE VERY END.
  1. 50 gms of brown sugar 
  2. Cup of Lemon juice 
  3. 2 Chopped cloves of garlic
  4. 20 gms Oregano
  5. 20 gms Mustard
  6. 50 gms Tomato puree 
  7. 25 gms honey 
  8. Salt and pepper.
Simmer and mix well all together, add your Ribs back to the glaze for 20 mins and transfer to your B.B. Q .Your glaze should be thick and sticking to the Ribs. Put the ribs on the B.B.Q, brush on the glaze and a dribble of Honey.
 
The Ribs are well cooked so you only need to Bar-B-Q with the brushed on Glaze to develop the required colour.
